Locally inspired, radical alterations to tradition foods are being exhibited in the Bronx Night Market, Ghetto Gastro Collective, and Arthur Avenue’s Fiasco. Even in last month’s New York Pizza Festival, Zero Otto Nove challenged the norms for pie toppings adding short ribs, Tropea onions, and Calabrese chili oil. As she and her neighbor visited the many historic, personality filled stores in the neighborhood, she found inspiration at Egidio Pastry Shop. At the turn of the last century, Mario Madonia immigrated from the Sicilian town of Monreale. While Sicilian specialities gave Madonia bakery their start, various other baked goods have been introduced over the years drawing in regular customers including a favorite, large, soft sea-salt covered pretzels.
